It used to be harvested in the wild (recently entered cultivation) for use in preparing Za’atar, a mixture of dried Oregano, Thyme, Sesame and Sumac for flavoring and garnish.
Lebanese Oregano is naturally cured, air dried in the shade and grounded to make the powdered spice of the same name.
Lebanese Oregano is indispensable in Lebanese cuisine and a popular seasoning throughout the Middle East. The leaves are used fresh or dried and crushed.
It is the main herb in the spice mixture that is also called Zaatar – dried and powdered Za’atar is mixed with Garlic, Salt, Olive oil and crushed Sumac seeds and spread on bread. Ground Lebanese Oregano can be used as a rub with other herbs for roasted meats, stirred into cooked vegetables or combined into savory sauces.
